Mate VS Tomaž

Mate VS Tomaž

Mate Janković, Tomaž Kavčić

The culinary duel and cookbook of popular chefs Mate Janković and Tomaž Kavčić brings together Croatian and Slovenian gastronomy through creative, self-interpretations of traditional dishes and ingredients.

The book and gastronomic project Mate VS Tomaž were created as a result of a culinary competition and friendship between two leading regional chefs – Croatian chef Mate Janković and celebrated Slovenian chef Tomaž Kavčić. The concept of the publication is based on an attractive format of a culinary "duel" in which both authors are given the same local ingredients or traditional recipes, but approach them through their own technical skills, personal philosophies and contemporary culinary visions.

The book intertwines Croatian and Slovenian gastronomic heritage, from seafood and top-quality meats to indigenous cheeses and seasonal vegetables. Each chef offers his own version of the dish – while Janković often leans towards more robust, modernized Mediterranean and continental flavors with a clear authorial signature, Kavčić brings his recognizable elegance, micro-local terroir and highly aestheticized haute cuisine techniques.

In addition to the recipes themselves, the publication abounds with high-production photographs, culinary advice and anecdotes that show the dynamics of their work. The book is an excellent guide for all lovers of modern regional cuisine and gastronomic creativity.
