Something fresh, ripe and at the peak of the season
Whether it’s in a top restaurant or a student apartment, I’ve noticed that in a good kitchen you’ll always find quality ingredients: fresh, ripe, seasonal and local. Recipes, as I understand them, are at the very least a method of recording the cooking process. At their best, they capture a moment of inspiration in the kitchen. In that sense, for me, preparing a meal is not blindly reading recipes, but a skill that involves all the senses, as well as the heart, head and hands. It’s important to know what you’re cooking and why, and to always remember that we’ll be sharing the meal with loved ones at the table…
